About Us
At Achadinha Cheese Co., we pride ourselves on our rich heritage, deeply rooted in family traditions stretching over three generations. Our cheese-making journey began in the quaint locality of Achadinha, Portugal and transitioned to the landscapes of Vallejo, California with Jim's grandfathers initially milking cows. The legacy was furthered by his parents, who in 1955 set out on their own and eventually settled in Petaluma in 1969. Today, our family, led by Jim and Donna Pacheco along with their four children, personally oversees the operations, dedicating our efforts to producing exquisite farmstead cheeses.
Our farm features 50 Jersey cows, which are pivotal in helping us create our signature cheeses. In addition to our dairy herd, we also raise beef cows, pigs, sheep, horses, chickens, dogs, cats, and ducks. This diverse range of animals allows us to harness the fresh flavors of our farm and bring uniquely delightful cheese offerings directly from us to your table.
We understand the importance of sustainable farming. Our farm spreads across 230 acres, where our cows graze and are fed with locally-sourced nutrients like brewer's grain and yeast from four nearby breweries. We operate without synthetic hormones or pesticides and work in harmony with the cows' natural cycles, allowing our cheese to reflect the seasons and the varied diet of our cows.
